Hi to all of you out there in the blogoshpere!
As the owner of Bubbles' Doubles food cart located in Madison WI, I've decided to give this blogging thing a try.
I started my cart last year selling Doubles and Roti from Trinidad and Tobago. Although sales went pretty good, I didn't have the client base to allow me to be profitable during the winter months.
I am so looking forward to the spring when I'll be back up and open for business.
The population of TnT is made up of--approximately--40% Black; 40% Indian--i.e people from India--and the remaining 20% of people from other ethnicities; Chinese, Africans, Caucasians, Syrians, Lebanese and Arabs. There are also descendants of one of the Amerindians groups who Columbus 'discovered' when he came to TnT; the Caribs. The other; the Arawaks died out--it is alleged--ten years after Columbus came from diseases, enslavement and merciless slaughter? It is also alleged the Caribs were cannibals; who ate the Arawaks??
But enough of thoughts of people-eating!
We are talking non-people food here!
Doubles is two small pieces of flatbread filled with curried chickpeas, or--as I've found out from our Madison carnivores--filled with curried chicken!!! Oh and it is called Doubles even though it is one item, I'll explain in another blog.
Roti is the larger--burrito-like--option. The veggie/vegan option is filled with curried chickpeas and curried potatoes. Curried chicken is added to the meat lovers option.
